Vinosophia Cerasuolo d'Abruzzo DOC Biologico is an organic rosé wine made from 100% Montepulciano grapes. The harvest takes place in the second week of October, based on the ripeness of the grapes, which is assessed through sugar content, pH, and total acidity. The winemaking process follows modern rosé techniques: the grapes are destemmed and left in contact with the must for 10-12 hours at a temperature of 8-10°C, then fermented at around 15°C. The wine is separated from the lees and stored at 12°C until bottling, following organic wine production standards.
Organoleptic characteristics: The wine has a lively rosé color, with a fresh, fruity, and intense aroma, and a young, fresh, and smooth taste, with good body and persistence.
Food pairings: Ideal with light dishes, fish stews, and fresh cheeses.
Storage and service: Store at 8-10°C and serve at 10-12°C.
